|
Make a pocket in the turkey's breast, and insert creamed cheese, with herbs. Coat with flour; egg wash and oatmeal. Deep fry chicken breast until golden brown.
Sauce: Cut leeks into strips and blanch. Reduce cream in a pot and add white wine, mustard and blanched leek, season. To taste, serve the chicken in two halves, garnish with herbs, tomato and lettuce.

| Shrimp ceviche with palm hearts |

Cook the shrimps for two minutes with ½ cup of water, salt, pepper, cloves of garlic and reserve this water.
When the water is cold, mix with the orange and lemon juice, ketchup and mustard, the palm heart sand olive oil. Cut the onions in to strips and blanch with one lemon juice.
Serve with the onions and coriander, and on the side pop corn and fried green plantain.
